I've just completed 55 days of my 60 day visa allocation in Thailand, then flew out to Cambodia.
What would you suggest the minimum volume of days out of Thailand, before I fly back in via Bangkok airport, to hopefully get another 60 days?

Their numbers are down so bad that I doubt their on a position to say know. PM says it's a crisis now on how low the numbers are. But Thailand loves to shoot themselves in the foot
The fact you didn't take the 30 day extension will possibly work in your favour as you did not max out your first stay then try to re-enter soon after to repeat. Have the 3 proofs just in case you are questioned :
- proof of accommodation for at least your first few nights (hotel booking or a letter of invite from a Thai)
- proof of onward travel (international travel ticket leaving Thailand within your initial entry stamp exit by date)
- proof of funds (20,000 Baht or equivalent in any major currency in CASH per individual, or 40,000 for a family)
Since there is zero limitations on entrances either via air or land…I say book a sane day flight, go early morning get lunch in Cambodia then schedule dinner in Thailand

technically indeed, in practice it's much more complex / nuanced and is being discussed, reported and proved on this group almost every day. You're only focused / blinded on one thing and you thus keep contributing with useless comments despite people already telling you that your argument is laughable.
Key word "hopefully". So many stories recently of people being denied entry in this scenario. Immigration is cracking down on 'tourists' who are spending too much time. Probably best to get a visa or use a fast track service.
