TLDR : Answer Summary
The individual needs urgent advice on where to apply for a Tourist Visa for themselves and their son following the cancellation of their Non O Visa. Recommendations from the community suggest Vientiane in Laos and Penang in Malaysia as viable options. To obtain a 60-day tourist visa, the preferred route is to travel to the Thai consulate in Vientiane. The suggested travel plan includes flying from Bangkok to Udon Thani, taking a minivan to the Nong Khai border, applying for the visa at the consulate, and returning the next day to collect the passport.

Hands down the easiest thai consulate to deal with is the one in Vientiane. Fly from Bangkok to Udon Thani by Nok, Air Asia, or Thai Lion air on an early morning flight, take the mini van to the Nong Khai border, cross in to Lao, go to the thai consulate and apply for the tourist visa.

The next afternoon go get your passport, make your way back to the border, cross in to thailand at Nong Khai then get back to Udon to catch an early evening flight back to Bangkok.

That's the fastest and easiest way you can do it.

My son and I are here on a Dependent O Visa Obtained in 2016 in the USA, and extended yearly here in Thailand. I would prefer a Multiple vs a Single Entry Visa. But will take a Single at 60 days if thats the fastest option.

you can't get a multi-entry tourist visa from any thai consulate in S/E Asia without holding legal residence IN that country :/

Vientiane in Laos, Penang in Malaysia. If its urgent you can also cross the border in Ranong to Myanmar for a 30 day stamp (if you havent been using ground borders to renew visa 2 times this year)
