Hi! My partner and I have Canadian passports and are going to Thailand/Vietnam for 7 weeks. We’re going to fly direct in and out of Bangkok (we used points) at the beginning and ending of our trip. We’re thinking 3 1/2 weeks in Thailand, then go to Vietnam, then back to Thailand to leave. What’s the best way to do this, visa-wise?

TLDR : Answer Summary
Canadian passport holders can enter Thailand visa-free for 30 days under the visa-exempt entry, which is suitable for their planned itinerary of staying 3.5 weeks in Thailand, then visiting Vietnam, and returning to Thailand before leaving.

As canadian passport holders you get in free for 30 days on what's called a visa exempt entry. I'd say given your planned stay each time in Thailand, just come in visa exempt (free entry), don't bother with any visa. You will be fine.
