What happens to my E visa stay if I leave Thailand before it expires and then return?

I'm on a 60 day E visa from the UK.

Expiry date March 4

If I go to another country Lao before March 4 will the 30 days be added on from March 4 or start when I do border crossing and return to Thailand?

But if I go to the immigration office and not leave the country, before the 60 days end, just apply for a 30 day exemption would that be added onto the 60 days as I haven't left the country or would it not count?

Nothing is added to anything. If you leave the country, your current stay is void. If you then come back you get another 30 days, obviously from the moment of entering.

If you want 30 more days added to the end, you need to go to your local immigration office and apply for an extension.

If you leave Thailand you give up any time you have left and you'll be making a completely new entry and receive a visa exempt stamp effective the day you enter. You can only enter at a land border without a visa 2 times per calendar year. This would use up one of those entries.
