TLDR : Answer Summary
When re-entering Thailand with a student visa on a re-entry permit, you typically should not be asked for additional documents at immigration as long as your visa and permit are valid. However, it's advisable to carry supporting documents such as bank statements, cash, and certificates, just in case. For your mother entering on a visa on arrival, the regulations usually require having sufficient cash for her stay (often around 10,000 THB per person) and proof of onward travel.

you shouldn't be asked for anything stamping back in on a valid ed extension with a re-entry permit

What country is your mother's passport from?
