Can I fly to a nearby country and re-enter Thailand from there?
Or do I need to fly back to Italy and return to Thailand from there?

that agency has an immigration agent they work with strictly for exempt tourist entries. That's why they told you that. All you need to do is cross the border yourself and return. You're stamped in for 180 days no problems at all.
The agency just wants to collect a fee from you and control you, keep you in fear.
You don't need a babysitter to make a simple border run. When you re-enter Thailand make sure the immigration officer understands you already have a Visa and that you don't want to be stamped in as a tourist. Itβs not a problem, you just have to empower yourself.

The guy said a person went doing the border run and they didn't stamp him with the DTV.
