The immigration office in Chiang Mai break for lunch, so either go when they open in the morning or be queuing up 15 mins or so before they return at 1.00pm. Count on being there at least a couple of hours

As Australian passport holder you got the Visa Exempt Entry stamp (not a visa). If you like to stay longer than the 30 days permitted to stay you can apply at the Immigration office in Chang Mai for 30 days Extension of Stay. You walk in, bring copy id page passport, copy entry stamp in passport, copy departure card, 1 passport picture, receipt of hotel, 1.900 Thb fee. Fill in the application form, wait your turn and they give the the Extension of Stay directly. No agents needed and it takes a few hours depending on how many people like to do the same. Address of Immigration office is:
Chiang Mai allows extensions of stays to be applied for when you have 45 days or less left on your current stamp SO comin' in on a 30 day visa exempt you could get it done right after you arrive if you wanted to
