Hi everyone, from what I can see it looks like you need a letter of employment when applying for a 6 month multiple entry tourist visa.

For those in Australia who are self-employed as a sole trader or with their own 1 person company, how did you meet this requirement?

TLDR : Answer Summary
The requirement of a letter of employment for a 6-month multiple entry tourist visa (METV) to Thailand seems unclear. One comment indicates that some applicants may simply note their business name if self-employed. However, another commenter suggests that while applying for the METV, employment verification is not necessarily required, referencing their successful application without proof of employment.

I just wrote my employer on the form, I'm sure you could write the name of your company! :)

Not correct - I got my METV in Canberra last year and I'm not employed. The form (from Thai Embassy Canberra does not ask for employment verification for METV)
