I have tried to find information on whether the one day quarantine is still allowed when flying to Thailand from England via a connecting flight in Dubai. Or will I have to fly direct?

it doesn't matter how you fly here as long as you don't go through passport control in a transit country airport. If you're vaccinated and from exempt country you can do test and go
I use Emirates normally and the only official notice I can find is that you have to be resident for minimum of 21 days from a country on the 40+ allowed list
there’s now 63 countries allowed. You can have been in any of them or a combination of them for 21 days. If you’ve visited a country not on the list the 21 days resets.
