TLDR : Answer Summary
Cancelling a visa at Chiang Mai immigration can typically be done immediately, provided that all correct paperwork is submitted. After cancellation, the individual has 24 hours to leave Thailand or can apply for a 7-day extension to that period.

With all the correct paperwork it can be done immediately, you then have 24hrs to depart Thailand or apply for a 7 day extension to the 24hrs

To be honest, I am quite confused about what to do and when!
it is not a 7 day extension, it is actually an automatic denial of extension, and this gives you 7 days to leave the country

Thank you. Yes my letter states the 4th of June as the date I finish work with the foundation. What would be the best course of action for cancelling visa in terms of timing it well?

So just to be clear - I can go to immigration about 10 days before I leave, pay them 1,900 baht and get a 7 day extension which means that I do not have to return to immigration and I just leave the country on 4th of June OR I can simply go in on the morning of June 4th and cancel the visa then?
go to immigration and cancel it in advance and prepare to leave the country by 4th June

Oh god that is good to know. I was not told that! May I ask, is that 7 day extension created for you in the same moment that you have your visa cancelled - as in - is it given to you on the spot? Thanks
it is not an extension it is an extension denied stamp that gives you 7 days to leave the country, which you must do no further extension is possible, and they don't have to give it to you. It's much better if the letter from your organisation says you will stop on X date and you can go and cancel in advance.
If you pay the 1900 Baht, they'll give you the 7 days. Never heard of anyone being denied that. Otherwise you literally have to get out of the country the same day you cancel the extension, which is nuts.
Works for young people happy to get in the car or taxi and make a beeline for the Cambodian border but unrealistic for most other people.
