TLDR : Answer Summary
The time allowed to cancel your ED-Visa at immigration varies by office. For example, at the Chaengwattana office in Bangkok, you can cancel up to 2 weeks in advance. However, some offices may cancel the visa effective the same day, requiring an 'application of extension not approved' stamp to remain in Thailand for an additional week. It's also noted that some individuals have left without cancelling their visas.

and that you did that and got away with it after you came back and tried to get an extension is great for you
BUT the real way to do it IS
if you are on an extension of stay based on education you should cancel it before you leave the country because just stamping out doesn't cancel it,
AND
many MANY people have had issues returning to thailand, and then trying to get a visa or extension inside the country because they had an uncancelled ED visa extension in their passport

it's gonna vary by office. In Bangkok at Chaengwattana you can go up to 2 weeks early to do it
Some offices cancel it effective the day you go though ๐ฎ meaning you'd have to apply for and get an "application of extension not approved" 7 day stamp to buy you a week to get outta thailand for 1900baht
