Sorry another question. There is no letter from the embassy saying we have new passports. Do we have to ask for it at the Australian embassy

i would say, visit immigration and ask to transfer the stamps.
Some countries write in the passport it is a replacement of passport with nr aaaa125a12, some countries do this in the bar code, some countries provide a letter.
If Immigration need the letter, you can contact your embassy and ask and pay for it. If not needed, you saved some cash for a coffee.

Maybe it depends where you come from....but i had to bring a paper from my embassy that says to transfer the visa

take both passports and the letter from your consulate stating you got new passports in country to the immigration office and get the stamps transferred.
As a rule it's a free service (although some offices charge and don't give you a receipt).
I don't know if you can do it at the Blu Port Mall location or not, it might be only at the main office in Hua Hin..
