The only way to do it with both you and your wife coming in on tourist visas IF you don't come from a country whose embassy here issues the affidavit of income from abroad notary letter for proof of funds is for you both to open an account and put in the requisite 800K baht or the equivalent in foreign currency
Yes the account can be a foreign currency account but pay attention to the exchange rate because if it drops and your balance falls below the threshold required it will cause you problems
