Hello. Question. I’m on a 60 day visa exemption. I’m registered at the private home of my Thai spouse. If we take a hotel for a night away will I think the hotel registers me there. Will I need to re register at my wife’s when we return ?

I do this quite regularly and always if possible just register in my partners details. Immigration in maha sarakham did pick up on it when I did have to go for a residency cert for my driving licence, so I started doing this.
Unless you are going to your immigration office to get something done (extension, re-entry, resident certificate, etc) when you should refile the TM30, it won't matter at all whether you do or don't.
You can just forgo it and leave when your 60 days is up, no one will care in the least
