Am I going to have a problem coming in on a 30 day exempt but with a ticket out for 60 days hoping for another 30 days by getting extension.

Your previous entry history is going to factor into it more than anything else. If you're living here on back-2-back 30 day visa exempt or 60 day tourist visa entries they are going to give you more scrutiny than just a first time traveler to thailand

totally comes down to the immigration officer you get on that particular day. The rule is specific; you need proof of onward travel within the number of days you're stamping in for) BUT with that being said they know you can apply for a 30 day extension and are usually good about it.
