TLDR : Answer Summary
When canceling a Non-O visa, it is generally advisable to visit the immigration office about a week before the cancellation date on your paperwork. If the office allows for early cancellation, they can stamp you in until the expiration date. However, if early cancellation is not permitted, you will need to purchase a '7-day application for extension denied' stamp for 1900 baht, allowing you to stay an additional week. Otherwise, you must leave Thailand on the same day you cancel the visa to avoid overstaying.

Most people go to the immigration office a week or so BEFORE the cancel date on their paperwork, the office cancels the extension and stamps you in until the date on the paperwork you showed to cancel the extension.
At the offices that won't "early cancel" you have to BUY that 7 day 'application for extension denied' stamp for 1900baht to give you a week to get out of thailand
Otherwise you leave the day you cancel the extension on or run on overstay
Hi. I want to get a clarification about what you said, “stamps you in until the date on the paperwork you showed to cancel the extension.”
I am scheduled to cancel my current visa next week (expires 31st of July). I asked the HR if I need to leave Thailand right after canceling, but they said I would get 21 more days to stay in Thailand before having to leave. Is that possible? I’ve only read about people leaving right after canceling their visa or obtaining the 7 days for 1900 baht.
if you have an extension based on marriage to a thai or retirement NO, you can do what James said, BUT if it's volunteer or for any other reason you should cancel it
