What is the correct order for canceling a work permit and non-B visa when changing jobs in Thailand?

When changing jobs, what needs to be done first, the work permit or the non-b?

I have a work permit and visa already. Which do I cancel first and in what order do I do this process without leaving the country.

I guess that will depend. If you're on an extension of stay you need to cancel the work permit then the extension. Then you need to leave the country. If you can align your two employers it may be possible to do it without leaving the country but you'd need to get the new Non-B at the same time you cancel the old one. If you're on a Non-B visa rather than an extension you don't need to leave when you cancel the work permit.

but when you stop working your extension is no longer valid so you have no choice unless you can immediately (that day) obtain another visa to allow you to stay.

nope. The 7 days you refer to is an extension denied stamp not an extension. If you get this stamp then you have no option but to leave the country in those 7 days.
