When applying for the DTV as a remote worker do you need to go for an interview? This could become difficult as i am of to work every six weeks and can not just take time off whenever it suits the embassy

What do you mean, you are off to work? I think you idea of remote work is different than what is meant here. Remote being, you can work from your laptop in Thailand. You have to have your employer write a letter saying you can work remotely from Thailand. It sounds like you work in a remote location, not remotely
I recommend you with polite I just find a way for you, the way no need to get an interview, no need to show money, no need to show any document of work, and then why you not polite ?
