Does anyone know if you can update your 30 day visa on the day of expiry? Or is this a risky move and could incur a fine?

You can apply for a 30 day extension on a 30 day visa exempt entry stamp right up to the last day your entry stamp is good for.

BUT

Seeing as they ADD the new extension to your current expiration date (meaning you don't lose any days going early) there is no reason to wait until the last day to do it.
