I remember reading some people from London got sponsored by their parents. Which embassy would you apply from? London is one embassy which is more lenient regarding how long the 500k is in your account for.
I would still ensure she has 500k in her own account (to prove she can support herself), even if it’s only in there for 1-2 statements. And then provide her with a sponsor letter and your bank statements for her application where you also have minimum 500k balance
Her application is completely independent of yours as you're not married. She needs her own 500k, her own soft power activity of at least 6 months duration etc. She may also be asked to show how she will support herself for the 5 year duration of the visa.
