1. If I have no address or proof of residency in my home country, do Thai embassies accept any Hotel address from the country where I`m going to apply for DTV?
2. Do I have to apply for soft power classes for the whole 5 years? Or only the first 180 day term? And if so, is it possible to change between different soft power activities?
Thanks for your help guys ;-)

TLDR : Answer Summary
The Thai embassies may accept a hotel address as proof of residency when applying for a DTV visa, along with other documentation like passport stamps. For the soft power classes, you only need to apply for the first 180 days, with the possibility to switch between different soft power activities thereafter.
