TLDR : Answer Summary
The question revolves around the process of switching employers while holding a Non-O visa in Thailand, specifically whether one can cancel the existing work permit and apply for a new one with a different employer to extend the visa. There are comments that hint at the specifics of the Non-O visa related to marriage to a Thai national or having a Thai child, which may impact the situation.

What Non-O will you be working on, married to a Thai or having a Thai child?

, if you will do volunteering for an organization, it will be a Non-O for that like kind of employment as volunteer, with work-permit.

If you will work for a standard company, no Non-O for employment.

normally a Non-B visa is sponsored by your employer so if you change employer you need to cancel your existing Non-B and get a new Non-B via the new employer. If both employers are willing to work together it's possible to do so fairly seamlessly but it does require them to cooperate.

You will need to get a Non B Visa and a Thai work permit.

Suggest you ask your Local Thai Immigration office for their requirements to do this.

And you will need the cooperation of your employer.

You may need to get the Non B Visa from a Thai Embassy or Consulate outside of Thailand.

Hopefully your Local Thai Immigration office will allow a change in the reason why you have the Ed Plus one year extension of stay in your passport.
