One question: I'm an Indian citizen. So i arrived in Thailand on june 5 and booked a confirm return flight for July 3 (before 1 month ends).
However, the stamped exit date at immigration is 3 August.
Now i want to extend my stay in thailand. So My question is can I extend my stay in Thailand till the exit date(3 August)?
Or do i have to leave as per my booking schedule(July 3).

Booking schedule is not important. You can change as much as you want. As long as you stay within the limits of your permitted period of stay. Stamped in your passport.
sounds like you bought a tourist visa from the thai consulate before you came here and were stamped in for 60 days when you arrived (your stamp should have TR60 on it)
If that's the case you can stay until the date it says you're "admitted until" on your entry stamp no problem.
So if you have an admitted until date of Aug 3 you're good to stay until then
