As I understand you’re from Israel. Then you are entitled to have a 30 days visa exemption (free stamp) at the airport when you come. This you can extend with another 30 days at the local immigration where you stay. The formal requirement is that you also show proof of a ticket out of Thailand within the first 30 days even if you not plan to use it. This could just be a cheap bus ticket. If you want 60 days immediately you need to apply for a 60 days tourist visa before you leave.

Could have problems with the airline, I didn’t with Thai airways last month and extended my visa at immigration.
I turned up early enough at the airport so if there were any issues I would have booked a outbound ticket
every thing and anything depends on the IO that you see on arrival. They decide they want anything and you dont have it they can refuse you entry. Likelyhood due to your ticket is doubtful they would stop you.
To be safe you can always buy a cheap on forward ticket for about $12

yes you can. If you are staying in Bangkok the first few days you land then you can immediately go out to the Lak Si immigration office at IT Square and get your 30 day extension immediately. You do not have to wait until it is almost expired.
That's a question you have to ask your airline. Immigration don't usually bother, but some airlines deny boarding unless you have an onward journey already confirmed within 30 days.
