Hi - I'm due to book a flight to Thailand for 75 days - I understand that a tourist visa will give 60 days and that I can extend at immigration for another 30 days - will having a 60 day tourist visa be acceptable at passport control in Bangkok or will I have to book another flight to say Cambodia before 60 days are up - Thank you

I could be wrong but I think that the onward travel requirement is when you are arriving visa free, I remember when I first came out here at manchester airport they said if I don't have a visa and going visa free then I will need to book an onward ticket out of thailand.
, If I understand right, same requirements to enter Thailand (at the immigration on entry point, air, land, or sea) for tourists, for both visa-exempt or tourist visa entries. When you have SETV, you still might be asked for three proofs (funds, accommodation, onward travel), and you would be refused to enter Thailand if you cannot show.
It's more airlines' policy that they check your outbound ticket only when you are without a visa.
I used to do this before COVID19. Once I was asked at the boarding, and I said that I was planning to go into Laos or Cambodia by bus (which was my actual plan :D) and then go back to Thailand.

you shouldn't have any issues with your air carrier checking in to your flight OR at passport control when you go to stamp in here on a valid tourist visa. They won't ask for onward travel when you stamp in
I had a TR60 flying with Qatar from London with my return flight on day 86. The check in agent went to check with the flight supervisor that I could board having told him I can get a 30 day extension in country.
as a rule MOST carriers won't even ask for onward travel if you have a valid visa in your passport. Qatar is known to be hard about it though, glad you got it sorted
