TLDR : Answer Summary
When applying for a Thailand tourist visa, it's acceptable to present an onward flight ticket that is valid for up to 90 days, encompassing the initial 60 days plus a possible 30-day extension. As long as the ticket aligns with the allowed duration of stay, it's generally accepted by many applicants.
and what this isn't gonna turn into is a pissing match of what each person and their particular consulate/embassy/airline allows.
The "rule" is you show onward travel within the number of days you get stamped in for. Now if your embassy/consulate/airline is okay with you having onward travel dated out past the number of days you get stamped in for, good on you.
that’s not gonna fly if the departing airline ask and can result in denied boarding. Embassy may accept in during visa application, but officially its 60 days

I apply always on the Belgian embassy for my tourist e-visa
, which embassy or consulate do you apply for your SETV? I understand that most embassies and consulates don't accept onward tickets longer than 60 days, especially after Covid.

You provide the ticket leaving Thailand within the duration you would be permitted to enter, 60 days with the arrival date as day 1.
