TLDR : Answer Summary
The original post questions the possibility of entering Thailand without a visa for up to 30 days, with the option of extending the stay if involved in volunteer work. Responses indicate that visa regulations depend on nationality and emphasize that a proper volunteer visa and valid immigration procedures are necessary to avoid legal issues.

In case you go volunteer you need a proper volunteer visa, not allowed otherwise as a tourist (though people do 🙈) Showing a letter like this is not helpful in your case, and might bring up other issues.

There is no thai embassy in Thailand. What would be the use of it for a country having an embassy in it's own territory?

Totally defeats the purpous of an embassy

You extend at immigration not at the embassy

ohh okay ! Good to know

Depends on your nationality. If eligible you don’t need any paperwork from a retreat to get an extension. You are legally not allowed to volunteer here without a work permit. Some people do but it’s not legal.

Poland and Spanish citizens can enter with no visa and will get stamped for 30 days. That can be extended once for a further 30 days at a local immigration office.

You will both need to get a ThailandPass. You need confirmed flights, accommodation and insurance. Apply here.

you are great !! Life saver ! Thanks.

And normal pcr with 10 days quarantine we need to compete?

But if we fly to Bangkok we need to have quarantine there or we can have in our place in Koh phangan?

depends on your vaccination status. If fully vaxxed you can do the test and go system where you book an approved hotel on day 1 and day 5. If negative after both tests you are free to travel anywhere in Thailand. If not vaxxed you need to stay 10 nights in an approved hotel room, from which you can’t leave for the duration.
