About visa runs. I plan on staying the 30 days Visa exempt with Canadian passpor, then going over to one of the neighbouring countries for few weeks then back to Thailand for another 30 days Visa exempt. Is this allowed and easy to do? Is there maximum number or limit to visa runs ? I will only be doing it once

TLDR : Answer Summary
Yes, you can exit Thailand to a neighboring country and return for another 30 days of visa exemption with a Canadian passport. Although visa runs are allowed, it's important to check if you need to reapply for the Thailand Pass, especially due to COVID-19 regulations. There are no strict limits on the number of visa runs, but frequent trips might attract scrutiny from immigration. It's advisable to ensure you meet any remaining requirements such as COVID-19 insurance on re-entry.
If your planning to stay in an other country for a few weeks, if you fly in and back you will get another 30 day visa on re entry. So might be a solution. Not sure on how the Thai Pass works, would say you will need to renew each time you want to re enter Thailand
There's a miscommunication here. My plan is to enjoy my 30 days Visa exempt leave to one of the neighbouring countries for couple of weeks to enjoy there then come back to Thailand for another 30 days Visa exempt. Not really visa run I guess but just to make sure I can easily get back into Thailand again
The only economic option for a visa run at the moment is Phnom Penh, but the cost involved would far outweigh simply going to immigration to get the extension.
for clarification I heard it was not as easy just showing up with your passport you need some special form from your accommodation if its not an hotel more difficult to get that form from the owner. Correct me if I'm wrong
from May 1st testing and quarantine restrictions dropped if you are vaccinated. You'll just need a Thai pass for each entry, which is just uploading proof of vaccination
