If you're a new arrival to thailand on a 60 day tourist visa entry AND the school you want to enroll in says they can't get the ED visa if you get a 60 day covid extension then I'd say if that's where you want to study don't get the covid extension.

I was thinking since there is covid extension still available so I can use that first since I’m on tourist visa currently, but when I asked some school for ED visa was told I can’t apply ED visa after covid extension
I doubt it. I rather believe that school is mistaken. But I can only speak for changing to NON-B for sure. In this case immigration actually suggested I took a CIVID extension, first, so that I would easily have sufficient days on my stamp before changing. They require at least 15 days of permitted stay left to do before doing a visa conversion. You may also encounter two common problems: 1) different offices do things vastly different at times and 2) a culture of where not knowing how can fastly result in saying “cannot” (e.g. with ED visa from schools). Be determined- and it can be done.
I gave up looking for that sort of thing in this country. You hardly ever find reliable information upfront. And even if you do, wouldn’t mean that individual offices (of the same organization) don’t deviate from it.
The document I shared above was handed to me personally in Chiang Mai and clearly states 15 days. But you could still be right. Be prepared for surprises - always 😅
