Quick question, is it possible to get a work permit (non B visa) or convert my current visa (non ED visa), while I’m still in Thailand ? I fear once I leave, there’s no way of returning considering the whole COVID flight restrictions.

TLDR : Answer Summary
A user inquired about the possibility of obtaining a work permit (NON-B visa) or converting their current NON-ED visa while remaining in Thailand. Responses indicated that currently, it is not possible to transition from an ED visa or its extension to an employment-based extension inside Thailand. Additionally, there are concerns regarding the difficulty of returning to Thailand after leaving due to COVID-19 flight restrictions.

at this time you cannot go from an ED visa/extension to an extension based on employment inside the country..

AND you're right, IF you leave you ain't getting back any time soon..
