Plan on being back in Thailand march/April sometime.
My question is can I apply for my visa back here in the UK so its ready ? Or would I have to do it whilst I'm in Central America...

You'd have to apply in Central America, you cant order visas in advance, they're valid from the date of issue, usually 1-2 days after you apply, however they're all valid for a minimum of 90 days, so you could book up to 3 months in advance
that's also what I wanted to hear wether it started the day you apply or the day you set foot.

Thai visas are valid from the day they're issued. You could apply for it at anytime, but depending on the visa, it might expire before you ever got to use it.
