I will need an extension of stay for my retirement visa which will expire on July 6, 2020 ... If I can go there ... I have planned a trip to Canada on June 22 this year before the expiration of my one year extension.

First ... I would like to know if I can proceed to obtain my extension before the expiration date?

Second ... I have to go to the Canadian embassy to obtain the letter certifying my income in Canada ... in the current context, can we do otherwise to obtain this document?

Just to complete my questioning ... in the context of COVID19 ... I still have to go to Bangkok to get my affidavit .... and there is no other way

you need the Affidavit of Income from your Embassy. Contact them. Maybe a way they have to issue via mail ?? But contact them soon.

You need to ask your embassy/ Department of State/ Ministry of Foreign Affairs about that. Some nations have consulate offices (i.e. for the USA, there's a consulate office in Chang Mai) and others don't. There may be some way to do it via mail as well.
