Hi there! My friend's visa application (60 days as tourist) has not been approved yet but he will fly to Thailand tomorrow. After getting the 30 days on arrival, can he "override" these at an Immigration office as soon as the 60 days are approved?

TLDR : Answer Summary
A friend's 60-day tourist visa application has not been approved, but he will arrive in Thailand tomorrow and receive a 30-day visa on arrival. However, it is not possible to upgrade or 'override' this stamp with the new tourist visa once in Thailand. To switch to the approved tourist visa, he will need to leave the country and re-enter.

No nothing can be done inside of Thailand to “upgrade” his visa exempt to the new tourist visa.

However once approved he can leave the country and re enter on the new approved 60 day visa

No he gets a 30 day stamp on entry which can be extended ONCE for another 30 days at immigration. If he wants to use the tourist visa he will have to exit and re enter Thailand . If it’s Evisa he should print the pdf

Nope. He will have to leave Thailand, check into another country and return to Thailand to enable the visa. Assuming of course that Thai immigration doesn't cancel the visa given he's already entered the country

No.
