Is a re-entry permit able to be used at a later date than given when purchased?

I was going to NZ for 2 weeks today but due to the travel restrictions have cancelled flight till later day.

If you mean that you gave a date that you would likely use the re-entry for when applying for it, that doesn't matter. As Robert said it's good until the current permission to stay expires.

thank you. That's right I gave a date I was leaving and approximate return date. Hence the question.

a Re-Entry Permit is valid until the last day of your current stay.

The valid until date will be the same as your Admitted until ../../.. or permitted up to ./../.. stamped in your passport.
