Hypothetical situation... Apply for single entry 60 day tourist visa via evisa in USA.

If this visa were denied (55 yr old drug arrest that was pardoned but electronic records don't indicate the pardon) and I showed up for a 30 day via exempt, would I be denied entry?

the only reason you could get denied is if you try to apply for a teaching job (that drug arrest would matter) otherwise it won't affect getting a tourist visa

they would deny a visa for the same reasons your home country would deny you a passport. If you have a legal passport you can get a tourist visa.

The Thai embassy isn't running a criminal history check on you for a tourist visa. Even for the visas that require one, you have to provide it to them.
