If I fly into Bangkok and get the 60 day visa and then towards the end of that go elsewhere for a week or so and then fly back in to Thailand will I get another 60 days?

You won't get a visa. But can enter for 60 days without a visa on entry ( visa-exempt).

You fly in and get 60 days visa exempt, not a visa. You can extend that exemption another 30 days. Then you must leave the country
that is at the discretion of the immigration officer on the day. But you shouldn’t have a problem doing this once, but you may well have a problem trying it a third time
