I live in Thailand in rented apartments, having to travel to Ho Chi Minh to submit the DTV application online - to prove the current location in Vietnam am I right in thinking an entry stamp to Vietnam will suffice or perhaps a hotel stay confirmation ? 

Also how long is it taking roughly for the visa to be approved ? 

Any help is much appreciated

entry stamp to vietnam and your hotel booking will work for proof you're there

consulates there have said they're doing 5 working day processing time,

So I'd plan at least that long 🙂

You provide your friend address and some form of their ID. You do not need to stay at a hotel.
