When you get your visa/extension transferred into a new passport do they use the start date of the extensions in the old passport or the actual date that it's transferred into the new passport?

TLDR : Answer Summary
When transferring a visa or extension from an old passport to a new one, the start dates remain the same as those in the old passport. The stamps and visa details are simply duplicated into the new document without any changes to the dates.

Stamps are transferred, means just duplicated to your new passport. No information would be changed.
