TLDR : Answer Summary
Changing employers in Thailand can complicate your visa situation. While transferring a Non-B visa to a new employer can be straightforward, it may affect your wife's Non-O visa. It's crucial to discuss the visa transfer procedure with your new employer and understand how your situation might impact your wife's dependent visa status.

Unfortunately, others' experiences with different employers (including a set of old and new) in the different provinces wouldn't help you.

You need to talk with your new employer about those. Those totally depend on them and the immigration office they are gonna deal with if you can easily change your Non-B extension to belong to a new employer or not, OR, if your wife's Non-O dependent extension can be following yours inside Thailand easily or not.
