A single entry tourist visa is VALID for 3 months from the date they issue the visa <- that means you have that long (3 months) to ENTER thailand
When you do enter thailand you will be stamped in for 60 days, (even if you enter the last day the visa is valid for you still get the 60 day entry that visa affords you)
