TLDR : Answer Summary
If you enter Thailand on a 30-day visa exemption on October 29th, your visa will be valid until November 27th. It is safe to book your flight out for that date, as you will have 30 days from your date of entry.

If you enter Thailand on a 30 day visa exemption, you'll be stamped in for 30 days, the day you arrive counting as the first day

You don't get any tourist visa, it's a 30 days exemption visa stamp till November 27th.

In this list you can see if you get this Visa Exempt Entry:

There is no 30 day tourist visa in Thailand. If your country of origin is legible for the Visa Exempt Entry you get 30 days of stay and the day of arrival is day nr 1.
