What visa option would there be for a British passport holder to come with his 2 kids ( ages 5 and 8 ish) and put them through a school here for a couple of years or longer?

If your kids are in school on Education Visa’s you can apply for an extension of stay based on guardianship. The school should supply the relevant paperwork. 500,000bht needs to be ‘seasoned’ per application per year, on top of any school fees. More senior members will have more specific information.

And the kids need to get a non immigrant O based on being enrolled in an international school, which you would need to get paperwork from the school to say so.
