TLDR : Answer Summary
To work as a teacher in Thailand with only one vaccination, you will need a Non-B visa, which the school typically assists in obtaining. Additionally, you have options regarding quarantine upon arrival, either in Bangkok or through one of the designated sandbox programs. It's advisable to stay updated on potential rule changes, particularly around October 1st.

sounds like they will be, I know the Thai Embassy in Vienna at least has stopped issuing CoEs for now on that basis.

Non B and school will assist with paperwork for that.

Few options for coming in quarantine in bangkok or one of the sandboxes.
