TLDR : Answer Summary
The Thai consulate in Istanbul requires proof of accommodation for visa applicants. Typically, this proof should cover the initial days upon arrival, and many applicants report that a booking for the first week is generally sufficient. However, consulate policies may vary. It's advisable to contact the consulate directly for specific requirements.

for my tourist "single entry" visa, (got from Singapore Thai Embassy) I was told by embassy official that I needed to show accommodation booking for the entire time i intended to be in Thailand.

each consulate has their own rules about how long you show proof of lodging for or even if you have to show it at all. :O

Usually a booking for your initial week or so is OK as you are seeking a Tourist Visa.

Thai Embassies and Consulates normally accept a few days after arrival as they understand people tend to travel around the country. You apply at a Thai Trade Center, best is to contact them what they want to see. Tel. (90 212)
