Wondering if anyone has been in a similar situation.
Currently working in Thailand with permit and visa, however my contract will end this month and will not be renewed.
My thoughts are to go freelance and move services online.
The DTV could be a great option for this. I'd leave the country once visa expires and apply out of country. However, I'm unsure how to show a portfolio of work with a new business.
What is currently being accepted as proof of work/portfolio documents?
Is there a requirement to show company registration or income from services?

Depends on your point of application. Each Embassy/Consulates applied different rules. The only hard requirement across the world is the bank balance. You do need some reference though and a company registration, reference letter from an employer or tax return filed as sole proprietor is helpful.
It's pretty much the same everywhere. Show a letter of employment plus company registration and the required bank balance (plus maybe 6 months worth of bank statements). If you have all these you're well set.
Anonymous participant Portfolio has a wide range meaning can inc a resume, samples of work, client references, websites, social media links etc. You can show what you are going to work on online. Also contact the embassy you will apply from for what they need, as embassies differ in their approval.
