I have a 60 day single entry Visa. I've been here about ten days. If I travel to Siem Reap, will it become invalid and I only get a thirty day stamp on returning?

That is correct. You would cancel the 60 day stamp when you stamp out of thailand.

When you return you would get a 30 day visa exempt entry and then depending on how long you are going to stay here you could extend that by 30 days at the immigration office for 1900baht if you wanted to..

, they could get a re-entry permit, but it wouldn't add any days to the original 60 day stamp they got when they entered the country. It would get them stamped back in until that date when they came back though.
