Unfortunately my husbands company HR took too long for his work permit so myself and our 2 year old daughtet now will have to leave and get another Non Immigrant O Dependant Visa.

Where would be the easiest / hassle free place  to go to with a toddler.

Flying out. 

Laos? Hong Kong? Singapore?

Why do you need to process another visa? U can stay on your visa until u get another work permit so just wait for your husband's company to hurry up with the work permit. Unfortunately for foreigners working here some companies take their time

I second that for Hong Kong, super super easy no matter what visa you are getting. Friendly staff and a great city. They also dont stamp your passport so it saves pages :)
