I have had DTV for two years but never renewed the muay thai part after it lapsed 6 months in. I have never had an issue upon entry but am wondering whether I should buy another 6 months. The rules are not clear. What are others doing?

You applied for and got issued a DTV based on doing Muay Thai training.
The visa is a multiple entry visa and is valid for 5 years.
What do you not understand, multiple entries means you can leave and come back into Thailand as much as you like using this visa during the 5 years of validity.
As long as the visa is valid you get 180 days of stay at entry.
You show the course to get the visa. Once you have the visa then you can use it - multi entry, each entry 6 months long - over 5 years. You should probably do the course you said you would do. If anything changes, we will all hear about it - that's for sure. Until then, there's no need to do another course.
Just because they don't check at the border every time doesn't mean the requirement isn't there. To keep the DTV valid under the soft power category, you are expected to be participating in the activity you applied with. In your case Muay Thai course. While you might slide by on a re-entry, if you ever apply for an extension at an immigration office, they will ask for updated enrolment proof and receipts, and if they don’t, you’re lucky. If you can't produce them, you risk having the visa revoked for failing to meet the stay conditions.
Anonymous participant 579 Hmmmmm 🧐 Tell that to the 2 foreigners who both have a DTV Visa for Muay Thai training... and were DENIED ENTRY into BKK Suvarnabhumi Airport several days ago by the Thai Immigration Officer who asked both of them ..
What did you do to get the DTV visa?
Both replied with Muay Thai training... The Officer asked for the name of the Muay Thai training school gym... and CALLED THEM.. SEEKING verification that they are students at the Muay Thai training gym.
The School replied that they are not students... Therefore...ENTRY DENIED AND both paid for their ticket departing Thailand for Vietnam which is where they are now.

Right now, no requirement. But that can change. And immigration officers cant see how many courses you have had either. But they could ask you to show reciepts. They can ask basicly what they want ;p
Well, the rules dont mention the length of the course do they? So even if someone tries to say you have to meet the requirements on entering, even 1 week would be enough right? 😅 can have a cheap onward ticket for a week later too even if its not required
