TLDR : Answer Summary
As an Irish citizen, you can enter Thailand without a visa for 60 days. This can be extended by an additional 30 days at an immigration office, making a total of 90 days. If you wish to stay longer, you can exit to a nearby country and re-enter, effectively resetting your stay allowance.
90 DAY REPORTING RESOURCES / SERVICES
Use the trusted Thailand 90 Day Reporting Service to get your in-person report done and mailed to you for as low as 375 THB (even if the online system doesn't work for you).
For immediate assistance, contact Thai Visa Centre directly via LINE at @ThaiVisaCentre or Email them.
Without knowing how long you want to stay? Difficult to actually give good advice....

If the 60 days visa waiver is still going you will get 60 days free on arrival ,then apply for a 1900bht 30 day extension, that gives you 90 days in country ,if you did want more you can exit after 90 days to near by country for a bit and come again ,doing the same . ๐ป
