TLDR : Answer Summary
You can extend your 30-day visa exempt entry stamp either when you have 30 days or less remaining at most immigration offices, or when you have 15 days or less at some specific offices. It is advisable to check which immigration office you plan to visit for your extension.

IF you didn't buy a visa from a thai consulate BEFORE you washed up here and were stamped in for free for 30 days you got in on a 30 day visa exempt entry stamp.

Most offices let you apply for an extension when you have 30 days or less on your current entry stamp <- meaning you could go straight from the airport to the immigration office and get your 30 day extension

BUT

Some immigration offices only allow it when you have 15 days or less.

How about stating WHICH of the 70+ immigration offices you're going to use for your 30 day extension and we'll see if we can't give you an answer?

Your airline company can ask for onward travel within 30 days if you like to travel without a visa. The Thai Immigration can ask for onward travel within 30 days, but will understand if you have it on day 60. I would check with your airline company first.

The 30 days are an extension of your current stay and start counting from the Admitted until stamp in your passport.

Is the extension 30 days from expiry of visa exempt stamp or the application date.

seeing as you did NOT get O-A visas in your country before you washed up here, there are no health insurance requirements

you are in luck, (y)

Chiang Mai allows people to apply for extensions of stays when they have 45 days or less left on their entry stamp.

Seeing as you came in on a 30 day visa exempt entry you can go get your 30 day extension any time you want to.
